An Indiana-based restaurant is serving up a smoked carp dish that is gaining attention.

The Winchester BBQ and Smokehouse is dishing out the unique menu item, which includes smoked carp, smoked sausage, and smoked bacon.

Owner Brainard said the smoked carp dish is inspired by his grandmother's recipe.

"I've been cooking it for a while now and I just kind of put it on the menu and it's been doing really well," Brainard said. "Especially with the locals, they love it."

He says the smoked carp has a smoky bacon flavor that goes well with the sausage and bacon.

"It really surprised me how good it was," customer Chase Mullikin said. "I'm not from around here so I wasn't sure what to expect, but it's definitely something different and I'd order it again."

Illinois Restaurant Smokes Out a Carp Dish

Carp, typically a common freshwater fish found in North America and Asia, is being served up smoked at an Illinois restaurant. David Burke's Primehouse, located in the heart of Chicago, has a unique take on the traditional carp dish by smoking the fish and presenting it with an apple slaw and crispy potato strings. Chef de cuisine at David Burke's Primehouse, Jim Bracamontes, spoke about the inspiration behind the dish. "I really wanted to do something different with carp and show that it can be a delicious, elevated protein option. The smoked carp has a wonderful flavor and pairs perfectly with the apple slaw and crispy potato strings. We're excited to offer this dish as part of our summer menu."

The smoked carp is priced at $25 and is available for dinner starting June 5th.
